The sheer versatility of tacos makes them perfectly suited to vegetarian and vegan cooking. Bold flavors combining with complex textures are proof positive that plant-based cooking isn't bland.

In this class, we'll make two vegetarian options, both of which share a lentil-quinoa base:
- Lentil, cucumber and pistachio tacos with queso fresco, crème fraīche and a tomatillo salsa
- Lentil and apricot tacos with a roasted corn, spinach and sun dried tomato salsa
