Now, don't get me wrong. I love silicone brushes! They are the best for think sauces like BBQ. They are also terrific for a quick coating of oil on a crepe pan or skillet.
But, when finesse counts - like egg washes on pastry or bread - a silicone brush is just too heavy a touch. You can't paint a masterpiece with a silicone brush. And, isn't your pie crust (or baguette) a culinary masterpiece?
